Biere de Coupage (6.2%) brewed by Brasserie de la Senne in Brussels.
This special beer was created for the Cantillon #Quintessence in 2025. A Coupage beer is a blend of a young ale and a sour beer, in this case a 2 year old #Cantillon lambic. I tasted it last year during the event and tasted it again now that it has aged a while. Quite a nice evolution! The acidity is mild and well rounded and matches well with the complex vinous body. Yum π (I definitely should have bought more ..)

Sophia Lambic (6.5%) by Brasserie Cantillon in Brussels in a collab with Cantina Giardino winery.
Got to taste this special blend at the brewery. It's made of 2 year old lambic beer with white grape (Greco di tufo) pomace that fermented in amphora jugs for several months. After those months the grapes are pressed to extract the liquid and the dry residue is sent to Cantillon to be added to the lambic barrels. They use the equivalent of 300 grams of grapes per liter. The result is very tasty, still distinctively lambic but with lovely notes of white wine and late harvested grapes.#brasseriecantillon #lambiclovers

Last month we visited Brasserie Atlas in Bon Secours and it was definitely worth the drive from Brussels!
Atlas is a welcoming, historic tavern right on the border with France. They serve delicious food, all beautifully presented.
All beers are from the nearby brewery @brasseriecaulier which makes it a nice occasion to try different beers from their range. I had the blonde and triple of the renewed Bon Secours range, but of course they have Paix Dieu as well and their tasty alcohol free beer Zero Pression.
In my photos you can see the dishes we had. They looked amazing and tasted absolutely delicious. Each dish was a perfect ensemble of flavours.
Starters: Trompe L'oeil (tomato mozarella) and Tartare de Saumon
Mains: Rigatoni with burrata and Poisson de la criee with saffron and vegetables.Thank you so much to Brasserie Caulier for the invitation! We will definitely come back. π

This years grand cru is made with three different hops from New Zealand: motueka, nectaron and nelson sauvin.

Pinard de Bruxelles (7.5%) brewed and aged by BBP Dansaert (Brussels), bottled in March 2021. Beer made with Mourvedre grape must from the Languedoc and then aged in oak barrels from Bordeaux, Moscatel and Chardonnay.
Five years in a bottle and wow, what a nice beer blend! Wild yeast of course in both aroma and taste, also a mild and well rounded acidity with notes of grapes, a hint of fortified wine even, notes of prunes, spices and wood as well. YUM!π#dansaert #BBP #brusselsbeerproject
